Glossery ..

 

Khoya

Condensed milk.
Boil milk(1 litre) in a pan. Simmer till quantity is reduced to half, stirring and scrapin the sides with a spoon occasionally.
Continue boiling till the milk is reduced to thick paste-like consistency.

Garam masala

Fragnant spice mixture.
Dry roast cardamom(50 gram), cinnamon(50 gram) and cloves(30 gram) in a flat pan, till the spices gives off a fragrance.
Allow it to cool, then grind finely. Store in a air tight container

 

Chicken masala

Hot spice mixture.
Dry roast cardamom(50 gram), cinnamon(50 gram), cumin(35 gram) coriander(40 gram), dried red chilli(25 gram) and cloves(30 gram) in a flat pan, till the spices gives off a fragrance.
Allow it to cool, then grind finely. Store in a air tight container
